Grilled Hawaiian Pork Chops with No-raisin Coleslaw

Grilled Hawaiian Pork Chops with No-raisin Coleslaw

Ingredients
 
Pork Chops
½ cup low sodium soy sauce
½ cup water
1 Tbsp oil
⅓ cup brown sugar, packed
¼ tsp ground ginger
½ tsp crushed red pepper flakes (or more if you want it more spicy)
3 cloves of garlic, minced
2 Tbsp ketchup or tomato sauce
1 pineapple, cut in rings
900 g pork chops 
2 Tbsp corn starch
sliced spring onions, to garnish
 
Coleslaw
⅔ cup Clover Authentikos Greek style plain double cream yoghurt
2 tsp soya sauce
2 tsp garlic, finely chopped
2 tsp ginger, finely chopped
3 Tbsp vinegar
3 – 4  tsp sugar
1 small red cabbage, shredded
½ small green cabbage, shredded
100 g roasted and salted peanuts (or more)
 
Method
 
Pork Chops
Whisk the soy sauce, water, oil, brown sugar, ground ginger, red pepper flakes, garlic and ketchup until well combined.

Pour the marinade over the pork chops and let them sit for at least 10 minutes or overnight.
Spray a griddle pan with non-stick cooking spray and heat it to medium-high. Place the meat and pineapple rings in the hot pan and reserve the marinade to make the sauce. 

Grill them for 4 - 5 minutes on each side. Rotate them a little bit midway through each side if you want nice crosshatch grill marks. Keep an eye on them because thicker chops will need to cook little longer.

Remove them from the pan and rest them for 4 minutes tented in foil. While your meat rests, whisk the corn starch into the marinade and strain it into a sauce pan. Heat over medium heat until it starts boiling then reduce it to low heat for a couple minutes to thicken the sauce.

Drizzle the meat and pineapple with the sauce, sprinkle with sliced spring onions and serve immediately.
 
Coleslaw
Whisk the Authentikos Greek yoghurt, soya sauce, garlic, ginger, vinegar and sugar
well together.

Mix the cabbages in a salad bowl, add the dressing and toss to mix. Add the peanuts just before serving and mix well.
