
Healthy Grab & Go Muesli Bars

INGREDIENTS
150g muesli
1 ½ cups almond flour, lightly toasted
12 soft dates, pitted and chopped
1 cup pitted prunes, finely chopped
1/3 cup currants, rough chop
1/3 cup dried cranberries, chopped
1/2 cup sunflower seeds
2 tbsp linseed (flaxseed) or chia seeds
2/3 cup almonds or nuts of your choice, lightly toasted and chopped
2 tbsp cacao powder
2 tsp ground cinnamon
2 tbsp tahini/sesame seed paste
2 tbsp nut butter (optional)
1/3 cup honey
2 tbsp apple juice or cranberry juice, plus extra if too dry
METHOD
Grease and line a square cake tin with baking paper. Reserve 1/3 of the muesli then combine all the dry ingredients in a bowl.
In a separate bowl, combine the tahini, nut butter (if using), maple syrup and apple juice, whisking until smooth then pour over the dry ingredients and stir to combine. Add extra juice if mixture is dry. Remember mixture must not be too runny as it will need to set in the fridge.
Press mixture into cake pan, sprinkle over remaining muesli, then cover with plastic wrap and chill overnight. Once set, cut into bars and wrap in baking paper or place in airtight container.
