
Gourmet boerie roll with chakalaka relish
Serves: 4-6

Ingredients
1kg boerewors
6 hot dog rolls
2 onions, sliced plus 1 chopped
1 carrot
1 cup cabbage
2 chillies
½ cup baked beans
1 tsp cumin
1 tsp curry powder
1 tsp garlic
1 tsp vinegar
1/3 cup mayonnaise
2 tbsp coriander
salt and pepper to taste
½ cup corn flour
2 cups flour
oil for frying
Method
In a pan, on medium heat, fry your wors 3 min on each side until fully cooked. Cook longer if it is thicker then set aside. Pour your flour into a big bowl. Add the cornflour and whisk fully. Add the onions and coat fully before frying until golden brown. Set the onions aside and do not cover.
In a pot, fry the 1 chopped onion for 4 min until translucent. Add the garlic and all the spices followed by the carrot and cabbage. Cook until soft for about 15 minutes then add the vinegar, stir then add the baked beans. Cool for 10 min before stirring half of the coriander and mayonnaise.
Use the other half of the coriander for garnish.
