INGREDIENTS

for the Cake:

1 ½ cups almond flour
1 cup gluten flour
1 cup sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
3 large eggs
½ cup Clover Krush Orange 100% Fruit Juice Blend
½ cup vegetable oil
1 tsp vanilla extract
Zest of 2 oranges
 
for the Glaze:

1 cup icing sugar
2-3 Tbsp Clover Krush 100% Orange Fruit Juice Blend
Zest of 1 orange (optional, for garnish)
 
 
METHOD

Prepare the Cake:

Preheat your oven to 180°C.

Grease and line a 9-inch round cake pan with parchment paper. In a large mixing bowl, whisk together the almond flour, gluten-free all-purpose flour, sugar, baking powder, baking soda, and salt.

In another bowl, whisk the eggs, Clover Krush Orange 100% Fruit Juice blend, vegetable oil, vanilla extract, and orange zest until well combined. Gradually add the wet ingredients to the dry ingredients, mixing until smooth and well incorporated.

Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
 
Prepare the Glaze:

In a small bowl, whisk together the icing sugar and Krush Orange 100% Fruit Juice Blend until smooth and slightly thickened. If the glaze is too thick, add a bit more juice; if it’s too thin, add more icing sugar.
 
Assemble and Serve: Once the cake is completely cooled, pour the glaze over the top, allowing it to drizzle down the sides. Optional: Garnish with extra orange zest for an added burst of flavour and colour.
