Ginger cookies with white choc frosting

Ginger cookies with white choc frosting

Recipe by Zola Nene (Taken from her cookbook "Simply Delicious")
100 g butter, softened
175 g brown sugar
4 Tbs of golden syrup
1 medium egg
350 g cake flour
2 tsp of ground ginger
1 tsp bicarbonate of soda
Cookie cutter
Pre-heat the oven to 180°C.
Cream together butter and brown sugar

Beat in the golden syrup and egg until combined.
Mix together flour, ginger and bicarbonate of soda then stir into the wet ingredients to form the cookie dough.
Wrap in cling film and leave to chill in the fridge for 30 minutes.
Using a floured rolling pin, roll out the pastry to about 5mm thick.
Cut out cookies with a cutter into desired shapes.
Place the cut out cookies on a greased or non-stick baking tray.
Bake cookies for about 15 minutes or until golden brown.
Remove from the oven and allow to cool completely before sandwiching the cookies with ganache

For the White Chocolate Ganache:
300 ml cream
400 g white chocolate, finely chopped
300 g cream cheese
Boil the cream then pour onto the chopped chocolate.
Gently stir until all the chocolate is melted and the mixture is smooth.
Refrigerate until completely cooled (the mixture will thicken on standing).
Fold the cooled ganache into the cream cheese.
