
Giant Cookie Monster

INGREDIENTS
cookie base
1 ½ cups light brown sugar, packed
1 cup granulated sugar
1 teaspoon salt
1 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
chocolate cookie
2 tbsp. chocolate chips
¼ cup cocoa powder
sprinkles cookie
½ cup rainbow sprinkles
peanut butter cookie
¼ cup peanut butter
2 Tbsp. chocolate coated sweets, chopped
cookie monster decorations
500g ready-made blue buttercream
‘grass piping nozzle’
piping bag
eyes and mouth made out of fondant
to serve
vanilla ice cream
METHOD
Start by making the the base cookie dough. In a large bowl, whisk together the brown sugar, granulated sugar, salt, and butter until a paste has combined with no lumps. Whisk in the egg and vanilla, beating until light ribbons fall off the whisk.
Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix. This will cause the gluten in the flour to toughen, which will result in cakier cookies. Divide the dough evenly between 3 medium mixing bowls.
To make chocolate chip cookie dough, add the chocolate chips and cocoa powder to the first bowl. Mix together and set aside. For the sprinkles cookie, add the rainbow sprinkles to the second bowl, mix together and set aside. Lastly, for the peanut butter cookie, to the third bowl add the peanut butter and chocolate coated sweets and mix together until combined. Set aside.
Line a 20cm pan (preferably cast iron) with parchment paper. Make a rough triangular shape with each of the three doughs and add to the pan to resemble a pizza. Preheat the oven to 180°C. Chill the pan for at least 30 minutes, up to overnight. Bake the cookie for 30-45 minutes or stick a toothpick into the centre of the cookie and the toothpick comes out clean. Cool the cookie for 10-15 minutes before slicing and serving with ice cream.
For the cookie monster decoration, fill a piping bag fitted with a grass piping tip with blue buttercream. Pipe the buttercream on the entire surface of the cookie to resemble the cookie monster’s fur. Place the fondant eyes and mouth on top and enjoy your giant cookie monster cookie.
