Garlic and Thyme Mushroom Skewers

Cooking time: 20 minutes
INGREDIENTS
500 g mushrooms, of your choice
Skewers
Garlic butter
2 T olive oil
2 garlic cloves, chopped
1 -2 sprigs fresh thyme, chopped
Juice from 1 lemon
salt and black pepper
2 T butter, melted
To serve:
fresh parsley, chopped
lemon wedges
METHOD
Mix all the garlic butter ingredients together. Heat a non-stick griddle pan over high heat or braai the skewers over the coals. Fry the skewers two at a time. While frying baste the skewers with the garlic butter. You can also grill them in the oven.
