INGREDIENTS

for the chicken Fingers:

2 chicken breasts, cut into strips
1 cup whole-wheat breadcrumbs
2 tbsp grated Parmesan cheese
Salt and pepper to taste
1 egg, beaten
 
Sides:

3 slices of watermelon, cut into star shapes
¼ cup mixed berries
1 cup popcorn with a pinch of salt and cinnamon
2-3 salami sticks
Clover Nutrikids Cherry-Flavoured Full Cream Yoghurt
2 dried fruit rolls
¼ cup cucumber and carrot sticks

METHOD

Preheat your oven to 200°C and line a baking tray with baking paper.

In a bowl, mix breadcrumbs, Parmesan, , salt, and pepper.

Dip chicken strips into the beaten egg, then coat them in the breadcrumb mixture.

Arrange on the baking tray and bake for 15-20 minutes, turning halfway, until golden and cooked through.

To Assemble the Lunchbox, add the chicken fingers to one compartment.

Add the remaining ingreients into the different compartments creatively.

Store in the refrigerator until needed.
