
Fuleka (Deep Fried Indian Bread)

Ingredients
4 cups flour
1 t salt
1 t bicarbonate of soda
6—8 T melted ghee
5 t sugar
1 t whole cumin, roasted
1½ cup warm sour milk or maas
oil for deep frying
Method
Sift the flour, salt and bicarbonate of soda together.
Using finger tips, rub in the ghee.
Add the sugar and cumin and sour milk or maas and knead to a soft dough. Cover and leave to rest for 30 minutes.
Heat enough oil for deep frying in a pot.
Devide the dough in ± 16 pieces. Roll each piece of dough into small circles - not too thin .
Deep fry in batches until golden brown and drain on kitchen paper.
