
Fry’s Quesadilla Burger with Eleanor Douglas-Meyers

Ingredients:
2 Big Fry Burgers, defrosted
30ml oil for frying
4 tortillas (small)
5ml oil
1 cup vegan cheese, shredded
½ cup lettuce, shredded
2 avocados, sliced
1 cup salsa
1 jalapeno, sliced (optional)
Cooking instructions:
Set out 4 tortillas (2 for each burger) and top each with shredded vegan cheese.
To cook the burgers, heat 30ml of oil on high in a non-stick pan. Add the defrosted Big Fry Burgers and reduce to medium heat. Fry for 9 minutes, turning occasionally. Set aside.
To cook the tortillas, lightly coat a second pan with oil and reduce heat to medium / low. Place the tortillas with vegan cheese upon the pan and wait for the cheese to melt.
Place the Big Fry patties on the tortillas, and top them off with your remaining ingredients. Finish off with the salsa and the tops of the tortillas. Cut in half and enjoy!
Chefs notes:
Make sure your Big Fry burger patties are completely defrosted before cooking.
Add a squeeze of lemon or lime juice for a citrus kick, or some freshly chopped coriander for a Mexican flair.
