
Fruits of the Forest- Baked Fruity Crumble

Ingredients
Crumble:
1/3 cup brown sugar
1/2 tsp ground cinnamon
4 Tbsp unsalted butter, melted
2/3 cup plus 1 Tbsp Cake flour
Baked Fruity Pudding:
2 cups Fruits of the Forest with cereal, any flavor
1 cup (1 x 380gm) condensed milk
3/4 cup double cream
½ tsp finely grated zest of an orange
1 tsp pure vanilla extract
Method
Crumble:
Combine brown sugar and cinnamon in a small bowl.
Pour in melted butter and stir in.
Add flour and stir until evenly combined. The mixture should be forming crumbs and hold together when pinched, put aside once ready to use.
Baked Fruity Pudding:
Pre-heat the oven to 180°c
In a bowl combine all of the above ingredients and whisk well until very smooth and combined. Pour into a wide ovenproof dish or 4 ramekins, topped with easy crumble. Bake in a preheated oven for 20-25 minutes until slightly golden brown crumble and firm custard. Remove from oven and cool down to room temperature. Refrigerate for 30 minutes before serving.
