
Friends In Your Freezer Rainbow Wraps

Ingredients
2 x Sea Harvest Crispy and Chunky Classic fillets
1 cup McCain Green Beans
½ cup McCain Carrots Julienne
¼ cucumber, cut into julienne / batons
½ red pepper, cut into julienne
1 tsp lemon juice / vinegar
8 rice paper wraps
½ cup mayonnaise
¼ cup sweet chilli sauce
¼ cup chutney
Salt and pepper
Method
Oven-bake the Sea Harvest Crispy and Chunky Classic fillets, and set aside to cool slightly. Once cool enough to handle, carefully slice into roughly 1cm wide pieces. Set aside for filling.
Prepare the McCain Green Beans and Carrots as per on packet instructions, and cool in ice water. Drain and set aside.
Season all your veggies with salt and pepper, plus a squeeze of lemon juice or vinegar. You can leave these all layed out on a plate or chopping board, to help make the filling and rolling process easier.
In a large bowl of room temperature water, dip the rice paper wraps and allow to soak for 5 seconds. Remove, allow excess water to fall out, and place flat on a plate or board.
Begin to fill your wrap, starting with a Sea Harvest Fish Fillet piece in the centre of the wrap. Add enough McCain Vegetable to cover the fish, tucked neatly and tightly together ( this all should still be in the centre of your wrap, with a clean border to allow rolling ).
Once you have added your filling, start by folding over the left and right hand flaps, towards themselves. Once this is done, you can then simply roll up the rice wrap into a cigar shape. Continue the process until all your filling is used up.
To make the dipping sauce, simply combine the mayo, sweet chilli and chutney in a bowl, and mix well.
Serve the Rainbow Wraps with your dipping sauce, and enjoy! Leftovers can be stored overnight in the fridge, but these are definitely best enjoyed freshly made!
Chefs tips
Feel free to use any fillings or ingredients that you like, the only limit is your imagination! This is a great way to get your kids involved in an interactive meal, that is healthier and quicker to prepare than most!
If your rice paper wraps are becoming stuck on your board while rolling them up, simply add a few drops of water to your board or plate before rolling, to ensure the wraps don’t dry out and become difficult to work with.
