Friends In Your Freezer Fish Goujons and Chips with Siba Mtongana

For the goujons 
1 box Sea Harvest Hake Medallions, defrosted 
3 eggs, beaten
100g parmesan, grated
2 tsp chicken stock powder
2 tsp garlic and onion powder
2 tsp mixed herbs
2 cups panko breadcrumbs
½ cup cornflour
¼ cup butter, melted
Salt and pepper 
½ - 1 pack McCain Classic Oven Chips
For the sauce
1 cup mayonnaise
3 tbsp tomato sauce
2 tbsp sweet chilli sauce
Recipe Instructions
Preheat your oven to 180 degrees Celsius. Create the crumb coating by combining the parmesan, chicken stock, garlic and onion powder, mixed herbs, panko and cornflour in a large bowl, and mixing well. Add a pinch of salt and pepper. Mix once more and set aside. 
Dip the Sea Harvest Hake medallions in the beaten eggs. Carefully dip the Hake goujons in the egg mix, then place into the crumb coating, and cover completely. Repeat this process to ensure an extra crispy coat! 
Place the McCain Classic Oven Chips in an oven tray, alongside the Sea Harvest Hake goujons. Bake for 10 minutes, then turn the goujons around to evenly cook both sides. 
While the fish and chips are cooking, create the sauce by simply combining the ingredients in a bowl, and mix well. 
Remove after 20 minutes, once the fish is cooked and the chips are crispy.

Serve immediately with the dipping sauce, and enjoy!
