Friends In Your Freezer Fish Chowder

Serves 4-6
2 tbsp oil
½ cup bacon, chopped
1 onion, diced
2 cloves garlic, minced
1 tsp smoked paprika
4 tsp flour
1 cup chicken / fish / veg stock
1 cup milk
1 cup cream
1 x box Sea Harvest Haddock / Hake Fillets, cut into bite size chunks
1 cup McCain Diced Potato, pre-cooked
1 cup McCain Sweet Corn
2 tbsp parsley, chopped
Salt and pepper
Serve with crusty bread to dip         
In a large pot over medium heat, cook your bacon in the oil until it starts to turn brown and crisp slightly. Add the onion and garlic, and cook until translucent. Add the paprika and flour, and stir. If the mixture is too dry, add another tbsp of oil.
Slowly stream in the stock while stirring, to avoid lumps. Bring to the boil, then add the milk and cream.
Add in your Sea Harvest Fillet pieces, followed by the McCain Diced Potato. Allow to simmer roughly 15 minutes to cook the fish, and thicken slightly ( the cream will reduce, and the starchy potatoes will help thicken too )
Once desired consistency is achieved, add your McCain Sweet Corn and chopped parsley. Mix well, and adjust seasoning with salt and pepper.

Serve immediately with crusty bread, and enjoy!
Chefs Tips 
Sea Harvest Hake is a perfect fish to use for this recipe, as it is light, flaky and will take on the flavour of the soup. Sea Harvest Haddock is also delicious, as it has a slightly smokier taste. You could even mix the 2, and get the best of both worlds!
We’ve used McCain Sweet Corn and Diced Potato, but you could also throw in some McCain Peas and Cauliflower florets to boost your veg intake even more!
