Fried pap balls with spicy mayo dip
Prep time: 20 minutes
Serves: 6-8
2 cups water
1 cup maize meal
1 tbsp dried mixed herbs
1/2 cup grated cheese
½ cup cooked crispy bacon bits (optional)
2 eggs, beaten
1 cup breadcrumbs, seasoned
Oil for frying
For the spicy mayo dip
1 cup Clover Classic Mayo
2 tbsp sweet chilli sauce
1 tsp chilli flakes/chilli powder
1 tbsp tomato sauce
Bring the water to boil and gradually stir in the maize meal. Mix until the porridge is well combined and smooth, no lumps. Allow to cook for a few minutes, stirring in between. Remove from heat and place the porridge into a bowl to alow to cool slightly. Add in the mixed herbs, grated cheese and bacon bits if using and season with salt and pepper.
Once completely cooled, heat the oil for frying and break of pieces of the pap and roll into balls. Dip the balls into the beaten eggs and then the seasoned breadcrumbs . Fry until golden in colour.
To make the spicy mayo dip, mix all the dip ingredients together and serve with the fried pap balls
