Fresh Milk sago pudding

Fresh Milk sago pudding

Serves: 4-6
Baking time: 35-40 minutes
 
Ingredients
3 cups Clover Fresh milk
½ cup sago, soaked in water
½ cup castor sugar
1 stick cinnamon
2 whole cardamom, bruised
Pinch of nutmeg
1 tsp vanilla essence
3 eggs, lightly beaten
 
Jam/syrup for serving
Cinnamon sugar for dusting
 
Method
 
Preheat the oven to 160C.
 
Heat up the milk in a large saucepot and add in the soaked sago. Add in the sugar, cinnamon, cardamom pods and nutmeg and gently heat up on a low heat, whilst stirring until the sugar dissolves and until the sago becomes transparent.
Remove from the heat and allow to cool slightly, and remove the whole spices. Stir in the vanilla essence and the beaten eggs. Do this by adding a bit of the warm sago mixture to the eggs, mix together, then add the egg mixture to the sago pudding. This method is called tempering.
 
Pour the mixture into a greased oven dish and bake for 35-40 minutes, until the topping is slightly golden in colour and pudding is set.

Serve with syrup or jam.
