Fresh milk peri peri prawn baked rolls

Fresh milk peri peri prawn baked rolls

Serves: 4-6
Baking time: 10-15 minutes
 
For the prawn filling

Ingredients
2 knobs of butter
3 garlic cloves, crushed
200g prawns, deshelled and deveined
1 tsp paprika
2tsp peri peri powder/Peri peri sauce
2 tblsp flour
3-4 cups Clover Fresh milk
Salt and pepper
Handful fresh parsley, chopped
1 cup Clover Tussers/White cheddar cheese, grated
Squeeze of fresh lemon
4-6 crusty breadrolls

Method
Preheat the oven to 180C.
To prepare the prawn filling, Melt the butter in a saucepan then add the garlic and the prawns. Add the paprika and chilli powder and stir for a minute. Sprinkle over the flour, and cook for a minute. Gradually pour in the Clover Fresh milk and stir to combine. Season with salt and pepper and garnish with parsley.

Place the breadrolls into a greased baking dish. Make a hole in the centre of each roll and spoon in the peri peri prawns. Squeeze over the lemon juice. Pour the rest of the sauce over the rolls and scatter the cheese over cheese and garnish with more parsley. Bake in preheated oven until the cheese is melted and rolls are golden.

Serve with a wedge of lemon.
