
Fresh milk Pea and Corn fritters
Ingredients
X1 tin corn kernels, drained/ frozen corn, thawed
2 spring onion, chopped
1 cup frozen peas, thawed
1-2 cups self raising flour
2 eggs, beaten
¼ cup Clover Fresh milk
2 eggs, poached
Method
In a bowl, combine the corn kernels, spring onion, frozen pear and self raising flour. Season with salt and pepper. Make a well in the centre and add in the beaten eggs and milk and whisk until a smooth batter forms.
Heat a pan with a knob of butter and oil and ladle spoonfuls of batter. Cook until golden brown then flip over and cook on the other side.
Serve with poached eggs and a sauce of your choice.
