Tomato Salad

Cooking with Tomatoes

Fresh Caprese Salad

350g Exotic Tomatoes, halved
1pkt Mediterranean vine tomatoes, roasted
3g Cherry Tomatoes, Halved
1pkt Salad Tomatoes, quartered 
1pkt nectarines, torn
250g Buffalo Mozzarella, torn
10g Basil Leaves
35g Micro leaf salad
35g Crimson Leaves
30g Mediterranean olive oil
10g Balsamic vinegar
Salt and pepper to taste

Slice the exotic and cherry tomatoes in half.
Drizzle olive oil and salt and pepper on the vine tomatoes before roasting on 180˚C for 20 minutes.
Quarter the salad tomatoes and set aside with the other tomatoes.
Tear the nectarines in half and the buffalo mozzarella and set aside.
Dress all the tomatoes in a bit of olive oil and balsamic vinegar.
Plate the tomatoes with the nectarines and top with the roasted vine tomato.
Add the buffalo mozzarella to the salad and top with micro greens. 
Put the micro herbs around to tomatoes and add the rest to the salad.
Season the salad with Maldon salt and black pepper.
