French onion soup

French onion soup with Clover Cheese toasties
Serves: 3-4
Cooking time: 25-30 minutes
For the soup
2 tbsp butter
1 tbso oil
4 large onions, sliced
3-4 fresh thyme sprigs (or 1 tbsp dried)
2 cups beef stock
2 tbsp dry sherry
Salt and pepper to taste
For the cheese toastie
French loaf/ciabatta bread, cut into thin slices
2 tbsp butter
½ cup Clover Tussers cheese, grated
½ cup Clover Cheddar cheese, grated
Freshly ground black pepper for topping
Melt the butter and oil in a large saucepot. And in the onion and cook until softened, then add in the fresh thyme. Cook for another few minutes. Add the stock and sherry and allow to cook. Season with salt and pepper and simmer for 20 minutes.
Heat the oven to 180C. Place the loaf slices onto a baking sheet and top with knobs of butter and the cheese. Place under the grill until the cheese melts. Remove from oven and garnish with black pepper
Ladle soup into bowls and serve with cheese toasties on top of soup
