Fragrant marrow pasta with herb pesto dressing

4 Large marrows
500g cooked spelt
±200g feta
2 lemons, zested and juiced
1 red chilli, finely chopped
1 spring onion, finely sliced
Salt and freshly ground black pepper to taste
For the dressing:
10g Basil, about a handful
10g parsley
10g mint
50g almonds, toasted
50g Parmesan, grated
4T red wine vinegar
8 anchovies
½ cup Costa’s extra virgin olive oil
Salt and freshly ground black pepper

Using the Clicks Smartlife spiralizer: spiralizer the marrows into marrow pasta. Add the still warm, cooked spelt to a mixing bowl before crumbling in the feta and adding the lemon zest and juice, chilli, spring onion, salt and freshly ground black to taste.

Combine then add the marrow pasta and toss together.
To prepare the dressing: Combine all the ingredients in a blender and blend until a smooth sauce is formed. Pour the dressing over the dish and toss to coat well.
Drizzle some extra virgin olive oil over and serve at room temperature or chilled.
