
Flapjacks with seasonal fruit and ice cream

Ingredients
2 cups flapjack mix
3 eggs
1 2/3 cup milk
¼ cup oil plus extra to cook
½ cup strawberries
½ cup blueberries
1 tub ice cream, flavour of your choice
½ cup maple syrup
Method
In a jug, thoroughly mix together eggs, milk and ¼ cup oil, then pour into the flapjack mix Fold everything together to your desired consistency. You can add more milk for a runnier batter. Lightly grease a pan and using a ladle or large spoon, pour in some of the batter and flip once bubbles form on the surface. Remove from the pan and repeat until you have used up the entire batter.
Serve flapjacks in a stack with the berries and drizzle generously with maple syrup. Finish it all off with a generous scoop of ice cream
