Fishcakes with Clover Classic Spiced Mayo
120g tinned fish (tuna/mackerel)
2 large cooked potatoes, mashed
1 egg, beaten
2 spring onion, chopped
1 tsp zest and 1 tsp juice of fresh lemon
2 tsp parsley dried or fresh parsley
Salt and pepper
½ cup flour seasoned with salt and pepper
Oil for frying
For the Spiced mayo
1 cup Clover Classic mayo
2 tsp red chill flakes
2 tsp sweet chilli sauce
1 tsp zest and juice of lemon
Drain the fish from the tin and flake into chunks . In a bowl, mix together the mash potatoes, fish, egg, spring onions, lemon zest and juice, herbs, salt and pepper.
Shape into round fishcakes and roll each fish cake in the seasoned flour.
Heat the oil and fry the fish cakes until golden brown.
Mix together the ingredients for the spiced mayo and serve with the fishcakes and a fresh side salad.
