Fennel, lemon and butter roasted whole chicken

Ingredients
1 Large whole chicken, approx 2kg
1 large lemon
A piece of kitchen twine
250g butter, softened
30ml chopped fennel leaves
15ml chopped parsley
15ml chopped chives
Salt and pepper to taste
 
Method
Mix the butter, fennel, parsley and chives together and season to taste.
Place the lemon inside the chicken and tie the legs together.
Loosen the skin of the chicken and rub the butter mix underneath.
Season to taste and roast for 45 minutes to 1 hour until the chicken is golden brown.
