Moist Orange and Rice Cake 

Serves : 12 
Preparation: 15 minutes
Cooking: 35—45 minutes
300 g sugar

zest of 2 oranges (20 g)
260 g flour
70 g cornflour or potato flour
70 g Excella oil
110 g orange juice 
3 eggs
170 g milk
1 Tbsp (15 g) baking powder
½ cup cooked Excella rice
30 g icing sugar, for dusting
Preheat the oven to 180 °C. Grease a ring cake or bundt cake tin (22—24 cm) with oil and dust with flour. Place the sugar and orange zest in the mixing bowl of the Thermomix and grind 10 sec at speed 10. Add the flour, cornflour, oil, orange juice, eggs, milk and baking powder and mix 30 sec at speed 5. Using a spatula, stirring in the cooked rice. 
Transfer mixture to prepared cake tin. Bake for 35—45 minutes or until golden. Allow to cool in the cake tin for 10 minutes before transferring to a serving plate and leaving to cool completely. Dust with icing sugar and serve.
