Excella Fried Chicken and Rice Lollipops

INGREDIENTS
 
Lollipops
8 drumsticks

2 cups Excella rice, cooked
1 tsp garlic powder plus extra for breading
1 tsp onion powder plus extra for breading
1 tsp paprika plus extra for breading
½ tsp mustard powder plus extra for breading
pinch of cayenne powder
salt and pepper to taste
flour, for dusting
2 eggs
breadcrumbs
Excella oil for frying
 
Dipping sauce
1 Tbsp cajun spice
¼ cup yoghurt
¼ cup chutney
 
METHOD

Make a slit through the one side of the chicken then remove part of the chicken from the bone creating a flap. In a bowl, mix the cooled rice with the measured spices then fill the chicken with the rice filling. Seal the chicken back up and secure with a toothpick and repeat the process with all the drumsticks. Bread the drumsticks/lollipops starting with seasoned flour (seasoned with the excess spices) then eggs, then breadcrumbs (also seasoned). Fry the drumsticks/lollipops in oil at medium to high heat ensuring the bone is also immersed. Fry until golden brown. Serve with the sauce.
 
Sauce
Mix all ingredients for the sauce together.
