Easy Vegetable One Pot

Easy Vegetable One Pot

Serves: 4

Cooking time : 35 minutes 

INGREDIENTS 
200 g couscous, soaked in 400 ml boiling water
2 Tbsp olive oil
1 onion, chopped
2 cloves garlic, chopped
1 tsp turmeric
1 tsp cumin
1 tsp coriander
1 tsp chilli powder
2 carrots, chopped
2 potatoes, peeled and chopped
250 g green beans, top, tailed and halved
1 cup water
1 tin chickpeas, drained (optional)
salt and pepper to taste

To serve:
fresh coriander leaves
cherry tomatoes on the vine, fried in olive oil
lime segments

METHOD
Soak the couscous according to packet instructions. Heat the oil in a large pan or pot. Add the onion and sauté until translucent, about 2-5 minutes. Add the garlic and spices and cook for a further 2 – 3 minutes. Add the vegetables and water and cook until the vegetables are tender. This will depend on how big you have cut your veggies. Give them about 10 to 20 minutes Add chickpeas, if using, and cook for another 3 minutes. Add the soaked couscous, season with salt and pepper and mix through. Serve with fresh coriander, vine tomatoes and a squeeze of lime juice.

Tip: You can substitute the fresh vegetables with 500 g frozen vegetables.
