Easy Clover Bliss Yoghurt Eggs Florentine

½ cup Clover Bliss Double Cream Plain yoghurt
4 hardboiled eggs, whites removed
2 tsp lemon juice
¼ tsp cayenne pepper, extra for garnish
1/3 cup wholegrain mustard
salt and pepper to taste
4 whole eggs
4 waffles, store bought or homemade, toasted
2 cups baby spinach, sautéed
4 – 8 salmon trout ribbons or bacon

In a bowl, cream the hardboiled egg yolks with the lemon juice and cayenne pepper to a smooth consistency. Fold in the wholegrain mustard until fully incorporated, then fold in the Clover Bliss Plain yoghurt. Season to taste then set aside.
Poach the 4 eggs to your liking, soft being the ideal.
Assemble the Florentine by placing the sautéed spinach onto the toasted waffles, followed by your choice of protein, either salmon or bacon (if using). Top with the poached eggs and season to taste. Then spoon a generous amount of your heated yoghurt sauce over each egg. Finish with a pinch of cayenne pepper on each serving. Enjoy!
