
Easy Chocolate Cake

Ingredient
Cake
3 cups cake flour
200 ml cocoa
1½ cup castor sugar
1 t salt
1½ t bicarbonate of soda
1½ cup cold water
1 t vanilla essense
275 ml mayonnaise
Brown sugar frosting
½ cup packed soft brown sugar
¼ cup butter, cubed
2 Tbsp milk
1¾ cup icing sugar
Method
Cake
Preheat the oven to 180 °C.
Grease and line 2 layer-cake pans (22 cm in diameter) with baking paper. Sift together the flour, cocoa, sugar, salt and bicarbonate of soda twice. Whisk the water, vanilla and mayonnaise together. Slowly add the mayonnaise mixture to the flour mixture and stir until well mixed (don’t mix too much). Scoop into the prepared cake tins and bake for 30 – 40 minutes or until a toothpick inserted in the centre comes out clean. Stand in the pans for 5 minutes, the turn out on a cooling rack to cool completely.
Frosting
In a small saucepan, cook and stir the brown sugar in the butter until bubbly. Remove from the heat; stir in milk. Gradually add the icing sugar, beat until smooth. Frost the cake and enjoy!
