Duck fat roasted potato skewers

Serves: 4-8
Prep time: 30 min

1,5kg medium sized mediterranean potatoes
1 tub duck fat (330g)
1 cup yellow maize meal
Salt and pepper to taste
6-8 thick wooden skewers
18-24 fresh bay leaves
Place the potatoes in a large pot and cover with cold water.
Bring to a boil and cook for 5 minutes. They should still be firm.
Cool down slightly and remove the skins.
Using a fork, scratch the potatoes so that it forms grooves on the surface.
Toss the potatoes in the maize meal.
Place in a roasting tray with the duck fat and season to taste.
Place in a hot oven until the potatoes are golden brown.
Skewer the potatoes with the bay leaves and keep aside.
Warm before serving.
