Dagwood Burger

Dagwood Burger for Dad

1 kg good-quality boerewors

60 ml Excella oil
1 packet (250 g) bacon, fried until crispy
4 fried eggs
4 ciabatta buns, horizontally cut in half
1 wedge (125 g) brie, thinly sliced
2 tomatoes, thinly sliced
1 onion, thinly sliced
3 gherkins, thinly sliced
4 slices country ham
8 basil leaves 
8 lettuce leaves 
sosaties sticks to assemble
6 Tbsp Excella mayonnaise

2 Tbsp basil pesto

Remove the sausage meat from the casing, divide into four and shape into large round patties. Heat 30 ml of the Excella oil in a griddle pan and fry the patties (4 minutes a side) until golden brown and slightly crispy on the edges. Remove from the pan and set aside. Fry the bacon in the same pan until crispy. Heat the rest of the Excella oil in another pan and toast the ciabatta buns, cut side down, until crispy. Keep aside.
Fry the eggs in the same pan with some additional Excella oil until your desired softness. Place the the bottom halves of the ciabatta buns in plates and top each with a sausage pattie, an egg, bacon, Brie cheese, tomato, onion, gherkins, ham, basil and lettuce. Mix the mayonnaise and pesto and spoon a generous helping over each burger tower. Top with the top half of the ciabatta bun and secure with a sosatie stick.
