Crumbed Chicken with Clover Classic Cucumber sauce

Crumbed Chicken with Clover Classic Cucumber sauce

Serves 4
Cooking time: 25 minutes
4 chicken breasts
Salt and pepper 
4 slices ham
4 slices cheddar cheese
½ cup cake flour mixed with 1 teaspoon of paprika
2 eggs beaten 
1 cup breadcrumbs
Preheat the oven to 180°C. 
Spray a baking tray with non-stick cooking spray 
Butterfly the chicken breasts, season each breast with salt and pepper, top with a slice of ham and cheese, close the breast and slice each breast in half. 
Dust the filled breasts with flour and dip into the beaten egg and then the crumbs making sure to crumb the cut side well. 
Place onto baking tray and bake for 25 minutes. 
Serve with the Clover Classic cucumber sauce. 
The Clover Classic cucumber sauce 
300 ml Clover Classic Plain  
1/ 2 medium English cucumber finely chopped 
2 Spring onions with tops finely sliced 
1 tablespoons lemon zest 
1 Red chilli finely chopped 
3 tablespoons chopped fresh Coriander 
Salt and pepper to taste 
2 cloves crushed garlic 
Stir all the ingredients together and chill till you are ready to serve
