Crispy Apple Donuts

Crispy Apple Donuts

Makes: 6-8 donuts
Prep time: 30min

Ingredients
Coating
2 cups panko breadcrumbs
1 tablespoons sugar
1 teaspoon cinnamon powder
½ teaspoon nutmeg
Frying
4 cups of oil for frying

Batter
1 cup cake flour
½ cup rice flour
2 tablespoon corn flour
½ cup of sugar
1 teaspoon baking powder
1 teaspoon cinnamon powder
½ teaspoon nutmeg
1 teaspoon salt
1 egg
1 cup  soda/sparkling water
pinch of salt

Donuts
4 Granny Smith apples, cored & sliced into 5mm thick rings - 5 to 6 rings

Instructions
Panko Breadcrumb Coating
Mix in mixing bowl panko, sugar, nutmeg & cinnamon

Frying
Heat oil to 180 degrees

Batter
Mix in separate mixing bowl cake, rice flour, corn flour, baking powder, salt, sugar, nutmeg & cinnamon
Whisk in egg & soda, until batter is the consistency of pancake batter
Soak apple rings in batter, then coat with the panko breadcrumbs coating
 
Deep-fry
Fry soaked/dipped apple rings for 4min, turning occasionally, until golden brown
Place fried rings on paper towel & then sprinkle with caster sugar
Enjoy later? Pop in toaster or heated oven
