Creamy Garlic Mussels

Serves: 4
Preparation time: 10 minutes
Cooking time: 15 minutes
2 Tbsp butter
1 Tbsp oil
2 onions, finely chopped
4 cloves garlic, minced
green chilli paste, optional
400ml sour cream
salt and pepper
½ cup parsley, chopped
to serve:
ciabatta, sliced and toasted
fresh parsley
lemon wedges
Heat butter and oil in a large pot, allow the butter to melt, then add onions, garlic and chilli paste if using and cook until onions are translucent. Add mussels to the pot, cover with a lid and steam for 7 minutes until the mussels are open. Scoop mussels out into a bowl and set aside.

Lower the heat and add sour cream and lemon zest into the pot let this cook for a few minutes, season the sauce with salt and pepper. Return mussels to the pot, garnish with chopped parsley. Serve immediately with toasted ciabatta bread and lemon wedges. Enjoy!
