
Braai Recipes - Cornbread and Potbrood

Corn bread
Makes: 6-8 servings
Prep time: 1h 20 min
Ingredients
250 ml coarse maize meal
250 ml normal flour
250 ml amasi or buttermilk
2 teaspoons of baking powder
1 teaspoon of baking soda
1 teaspoon salt
1 cup of cheddar cheese (optional)
3 tablespoons of oil
2 extra-large eggs
1 can of sweet corn
jalapenos cut into small pieces (optional)
Butter to grease pan
Method
Preheat oven to 180C
In a large bowl, Mix the dry ingredients and mix through. In a separate bowl, add all the wet ingredients and mix well
Rub inside of pot/pan with butter
Decant the mixture into casserole dish or deep baking dish and bake for 50 min to an hour or on medium to low heat on the braai making sure to pack coals onto the lid of the pot as well.
Remove from heat once cooked and serve warm with condiments of your choice.
