Coffee-Crusted Steak with Cheese Sauce

Serves: 4 
Preparation: 50 minutes
Cooking: 10 minutes
4  steaks (rump, fillet or rib eye)
2 Tbsp olive oil
2 Tbsp finely ground coffee (not instant)
1 Tbsp dark brown sugar
1 t smoked paprika
1 t salt flakes
½ - 1 t black pepper
½ t garlic powder (optional)
½ t onion powder (optional)
olive oil for frying
Cheese sauce
35 g butter
40 ml cake flour
1¼ warm cup milk
¼ cup warm beef stock
65 g Clover Cheddar Cheese, grated
Pat the steaks dry with a paper towel.
Brush both sides of the steaks with olive oil.
Mix the ground coffee with the rest of the ingredients. Sprinkle both sides of the
steaks with 2 teaspoons the coffee seasoning and rub the mixture into the steaks.
Set steaks aside to warm to room temperature approximately 1 hour.
After steaks are at room temperature, lightly sprinkle both sides of the steaks with
more coffee seasoning salt.
Heat a cast iron pan over high heat.
Place 1-tablespoon olive oil in the hot pan and place the steaks in the pan.
Sear the steaks 3 - 5 minutes without lifting or moving them or until crusty and brown. Flip the steaks over and cook them another 5 minutes or until they have a nice sear.
Remove the steaks from the pan, set them aside covered with a foil-tent to rest 5 minutes before serving.
While steaks are resting, make the Cheese Sauce.
Cheese sauce
Melt the butter in the same pan that the steaks were fried, add the flour en cook 1 minute while stirring.
Gradually add the warm milk  and beef stock and whisk while adding the milk. Cook for 2 minutes until thick.
Remove from the heat and add the grated cheese.
Serve the steaks with the sauce on the side to allow each person to add their own.
