Coconut and butternut fritters

Coconut and butternut fritters

Serves 6-8
Prep and cooking time: 35 minutes
Lactose Free
1 large butternut, peeled and cubed
1 can coconut milk
1 cup self raising flour
1 tsp baking powder
1 large egg
1 tsp cinnamon
Canola oil (for frying)
Place the butternut in a saucepan. Add the coconut milk and cook until the butternut is cooked through. Mash the butternut and set aside
In a bowl, mix the mashed butternut, self raising flour, baking powder and cinnamon
Beat the egg and add to the flour and butternut mixture
Heat the oil in a pan (just to cover the base). Pour spoonfuls of the batter into the pan and fry until golden brown on one side. Turn over the fritter and fry until golden brown too on the other side.
Place on a kitchen towel to drain excess oil.

Serve as is or sprinkle cinnamon sugar or honey. It can be served with ice cream as a dessert.
