Cocoa Rubbed pork ribs and with Clover Classic

Cocoa Rubbed pork ribs and with Clover Classic garlic herb sauce
Cooking time: 2,5 hours
Serves: 4-6
1-2 kg Pork ribs
1 heaped tbslp cocoa powder
1 tblsp brown sugar
1 tbslp chilli flakes
Salt and pepper
For the potato wedges
3-4 large potatoes, cut into wedges and parboiled
3 tbsp Clover Classic Fat spread
3 cloves garlic, roughly chopped
Handful fresh mixed herbs, chopped (parsley, thyme, oregano) or 1 tbsp dried
Salt and pepper
Preheat the oven to 180C
Mix together the cocoa powder, brown sugar, chilli flakes and season with salt and pepper.
Rub the cocoa mixture over the ribs and allow to marinade, overnight preferably. This allows the flavours to permeate through the ribs. Place into the oven and cook for about 1 ½ - 2 hours, until tender.
In the meantime, prepare the potato wedges by parboiling them and place onto a baking tray. Melt a spoonful of Clover Classic spread and pour over the wedges, toss to coat. Place into the oven to roast until they are cooked, for about 40 minutes.
Melt the rest of the classic spread in a saucepot and add in the garlic and herbs. Season with salt and pepper.

When ready for serving, pour the garlic and herb sauce over the wedges and serve with sliced ribs.
