Clover Yoghurt Brunch Toast Twist

Clover Yoghurt Brunch Toast Twist

INGREDIENTS 
Sweet
2 slices of white bread, crust cut off and cut into square quarters
½ cup Clover Bliss Double Cream Yoghurt, Plain flavour
1 egg yolk
1 tablespoon maple syrup
1 teaspoon vanilla extract
zest of 1 lemon (optional)
half of a fresh mango, finely chopped
mint for garnish

Savoury
2 slices of brown bread, crust cut off and cut into quarters
½ cup Clover Bliss Double Cream Yoghurt, Plain flavour
1 egg yolk
1 teaspoon garlic powder
salt and pepper to taste
quarter of an onion, finely shopped
100g cold meat of your choice, finely chopped
1 cup of gouda cheese, finely grated
bunch of chives, fined chopped

METHOD
Sweet
Preheat your oven to 180˚C and line a baking sheet with parchment paper. Add the Clover Bliss yoghurt, egg, golden syrup, vanilla extract and lemon zest into a bowl and whisk together.  Using a teaspoon, press down on the centre of the bread to make a well for the custard base.
To each piece of bread, add a spoonful of the yoghurt filling.  Place a teaspoon of the mango over the yoghurt filling. Place on baking tray and bake for 5 -8 minutes.
Garnish with mint and serve warm.

Savoury
Preheat your oven to 180˚C and line a baking sheet with parchment paper. Add the Clover Bliss yoghurt, egg, garlic powder, onion and cold meat into a bowl and whisk together until all ingredients are combined.
Using a teaspoon, press down on the centre of the bread to make a well for the custard base.
To each piece of bread, add a spoonful of yoghurt filling. Place on baking tray and bake for 5 -8 minutes.
Remove from the oven and top with the grated cheese and bake for an additional 2 minutes or until cheese has melted.
Garnish with chives and serve immediately.
