Clover Winter Fruit Cobbler

Fruit
5 apples, cored, peeled and cut in even wedges
2 pears, cored, peeled and cut in even wedges
100 g gooseberries (optional)
2 tbsp castor sugar
zest and juice of one lemon
2 star anise
3 tbsp Clover Nutrikids Apple & Pear Nectar
 
Cobbler topping
1 generous cup self-raising flour
⅓ cup castor sugar
½ t cinnamon
¼ t salt
100 g butter or margarine
⅔ cup desiccated coconut
⅓ cup walnuts, chopped
2 tubs (70 g each) Clover Nutrikids Banana Toffee Dairy Snack
1 egg, beaten
zest and juice of 1 lemon
beaten egg for brushing
whipped cream for serving

Fruit
Simmer the apples, pear and gooseberries (if using) with the castor sugar, lemon zest and juice, star anise and apple and pear nectar until the apples are just tender. Cool. Remove the star anise and place fruit in a baking dish.
 
Cobbler topping
Preheat the oven to 180 °C. Sift the flour, castor sugar, cinnamon and salt into a mixing bowl. Using your fingers, rubbing in the butter.

Mix in the coconut and walnuts. Add the yoghurt, egg, lemon zest and juice and stir into dry ingredients to form a wet dough.

Cover top of fruit with torn pieces of dough, brush with egg wash and bake in the hot oven until fruit is bubbling through the golden top (about 30 minutes).

Serve with whipped cream.
