Clover Vanilla Butter Cake with Frosting

Baking time: 25-30 minutes
Serves: 6-8

1 cup salted butter, softened
1 ¾ cups granulated sugar
4 extra large eggs
2 ¼ cup cake flour
1 ½ tsp baking powder
¾ tsp bicarbonate of soda
3 tsp vanilla essence
½ cup Clover Fresh milk
½ cup sour cream

For the frosting
500g full fat cream cheese
150g salted butter
1 cup icing sugar
1 ½ tsp vanilla essence

Preheat the oven to 180C.
Usinn an electric stand mixer or handheld mixer, mix butter and sugar on high for one minute then one medium speed for approximately 3-4 minutes until pale in colour.
Add the eggs one at a time until just incorporated and scrape the sides of your bowl. Add vanilla essence and mix until well combined.
Sift all the dry ingredients together then whisk for about 30 seconds. Add half of the dry ingredients to the butter mixture then mix on low speed until just incorporated. Add some of the milk and sour cream and repeat steps ending with the flour.

Pour batter into a greased and lined  baking tin of about 23cm and bake for 25-30 minutes or until a baked through. Allow the cakes to rest in the pans for a few minutes before removing it,

In a mixing bowl, combine the melted chocolate mixture, cream cheese and vanilla essence. Mix until well combined.

Mix the crushed biscuits with the melted butter and add to the base of your serving dish or glass. Top with the cream cheese mixture and garnish as desired.

To make the frosting, beat the cream cheese until smooth for about 1 minute. Add butter and beat for 30 seconds. Add in the icing sugar and vanilla essence and mix together until smooth. Once the cake have cooled, frost as desired.
