Tuna meatballs in roasted tomato sauce

Tuna meatballs with roasted tomato sauce and spaghetti

For the tuna meatballs
200g tinned tuna, drained (approx. x2 small tins)
2 tbsl fresh parsley, chopped 
100g fresh breadcrumbs
1 egg, lightly beaten
Juice and zest of 1 lemon
Salt and pepper
For the sauce
1 red onion, sliced into wedges
2 cloves garlic, in skins
1 tblsp dried/fresh oregano
Vine tomatoes/normal tomatoes
Butro oil
1 tin chopped tomatoes
1 tbslp chopped parsley
salt and pepper


  1. In a bowl, mix together the ingredients for the tuna meatballs and season well. Form little balls and set aside in fridge for 20-30 minutes minutes. 
  2. Into a roasting , add all the ingredients for the sauce and drizzle over the Butro oil. Season with salt and pepper and place into the oven to roast at 180°C. Roast for about 20-25 minutes, until the vine tomatoes have slightly blisetered. 
  3. Meanwhile, add a dash of Butro oil to a saucepan and fry the meatballs until they are slightly golden. 
  4. Once the roasted tomates have cooled, remove the vine from the vine tomatoes and the skins from the garlic. Add all the ingredients to a blender and blend until smooth. 


Serve tuna balls with the sauce and cooked spaghetti.
