Tuna meatballs in roasted tomato sauce
Tuna meatballs with roasted tomato sauce and spaghetti

For the tuna meatballs
200g tinned tuna, drained (approx. x2 small tins)
2 tbsl fresh parsley, chopped
100g fresh breadcrumbs
1 egg, lightly beaten
Juice and zest of 1 lemon
Salt and pepper
For the sauce
1 red onion, sliced into wedges
2 cloves garlic, in skins
1 tblsp dried/fresh oregano
Vine tomatoes/normal tomatoes
1 tin chopped tomatoes
1 tbslp chopped parsley
salt and pepper
- In a bowl, mix together the ingredients for the tuna meatballs and season well. Form little balls and set aside in fridge for 20-30 minutes minutes.
- Into a roasting , add all the ingredients for the sauce and drizzle over the Butro oil. Season with salt and pepper and place into the oven to roast at 180°C. Roast for about 20-25 minutes, until the vine tomatoes have slightly blisetered.
- Meanwhile, add a dash of Butro oil to a saucepan and fry the meatballs until they are slightly golden.
- Once the roasted tomates have cooled, remove the vine from the vine tomatoes and the skins from the garlic. Add all the ingredients to a blender and blend until smooth.
Serve tuna balls with the sauce and cooked spaghetti.
