
Clover Super M Milk Tart Pancake Rolls

INGREDIENTS
Milk tart filling
625ml Clover Super M Vanilla
30ml unsalted butter, melted
Pinch of salt
2 large eggs
2 tbls cornflour
1 1⁄2 tbls cake flour
75 g caster sugar
Pancakes
30 g unsalted butter, melted plus extra for cooking.
120 g cake flour
2 eggs, large
70 ml full cream milk
70ml water
For garnish
1 cup icing sugar
2 tbsp ground cinnamon
METHOD
For the milk tart mixture, pour the Clover Super M Vanilla along with the unsalted butter into a small saucepan and bring to a gentle simmer, then remove from heat.
In a bowl, beat the eggs with the corn flour, flour and sugar until pale and fluffy. Gradually whisk the Clover Super M Vanilla into the egg mixture - taking extra care not to do this too quickly or else the eggs will curdle.
Pour the mixture back into the saucepan and place over a low heat for 5–10 minutes, or until thickened, whisking constantly. Then pour into a bowl and place a piece of cling film directly on top of mixture. Set aside and leave to cool to room temperature.
For the pancakes, place a large frying pan on medium heat with a teaspoon of butter. Once melted, add a ladle full of batter (just enough to coat the base of the pan). Cook for about 2 minutes on each side or until lightly golden brown in colour. Repeat this for the remaining batter. You should end up with about 8 pancakes.
To assemble the rolls, place one of the pancakes on a large board. Spoon two heaped tablespoons of your milk tart mixture onto a pancake and then roll it into a log. Repeat this for the remaining pancakes.
To finish off, pile the pancake rolls on a plate. Mix together the icing sugar and cinnamon and gently dust over the rolls.
