Clover Spiced milk Crème Brulee

Makes: 4-6 servings
Prep time: 2 hours 20 min

3 cups Clover fresh milk
1 ½ teaspoons ground turmeric
½ teaspoon ground ginger
¼ teaspoon ground cardamom
¼ teaspoon freshly ground black pepper
¼ teaspoon ground cloves
1 whole stick cinnamon
3 tsp agar agar
Raw honey, to taste
2 -3 tbsp granulated sugar for Crème Brulee 

Place a medium-sized saucepan over medium-low heat. Add milk and spices, and stir to combine. Continue whisking slowly but constantly until the milk is hot, about 5-8 minutes. Do not allow it to scorch. Strain all the milk mixture and return to the milk to the saucepan. Pour in the honey and stir through.
Stir in the agar agar and allow the granules to dissolve before pouring into moulds. Set in the fridge to chill and set for at least 2 hours.
Once set, sprinkle the granulated sugar over the top of the crème brulee and caramelize with a blow torch. Alternatively, place into oven on grill setting, until the sugar turns a deep golden brown.  

Serve cold with a drizzle of honey
