
Clover Smashed Avo and Egg Sandwich
INGREDIENTS
2 eggs
4 slices of wholewheat bread
Clover Butter Spread
1 avocado, smashed mixed with ½ T of lemon juice
1 t chia seeds
1 t sesame seeds
1 t cumin seeds
salt and black pepper to taste
To serve
micro herbs
wax paper
kitchen string
METHOD
Place the eggs in a pot of boiling water and cook for +- 7 minutes. Drain and refresh under cold water. Peel, slice in half and set aside.
Spread Clover Butter spread generously over each slice of butter. Top a slice of bread with the avocado and egg. Place the chia seeds, sesame seeds, cumin seeds, salt and pepper in a small bowl and mix to combine. Sprinkle the seed mixture and micro herbs over the avocado and and top with the other slice of bread.
Wrap in wax paper and tie with kitchen string.
