
Clover Shredded BBQ Beef tacos with Chipotle & Lime dressing

INGREDIENTS
500g Beef brisket
1 onion sliced
2 cloves garlic, roughly chopped
1L beef stock
3 Tbsp taco seasoning
Salt & pepper
¼ cup BBQ sauce
For the chipotle and lime dressing
¼ cup Clover Dairy Snack ,Plain
2 Tbsp chipotle sauce
zest & juice of 1 lime
handful coriander, chopped
salt to taste
To serve:
8 corn taco shells or mini tortillas
250g coleslaw mix
Pickled Jalapenos, sliced
Coriander
Limes
METHOD
Heat some oil in a large pot.
Season the brisket with taco seasoning and sear on all sides until brown. Remove from the pot, add in the onions and garlic and cook until onions are translucent.
Then add brisket back into the pot and top with beef stock, cover with a lid and cook until tender. When the beef is tender remove from the pot and shred it using two forks. Then mix the shredded beef and BBQ sauce.
For the dressing: mix together all the ingredients until well combined, season to taste.
To assemble, if you are using mini flour tortillas, heat it in a dry hot pan. If you are using corn taco shells, place in the oven for a few minutes to crisp up.
Place some shredded beef inside the taco, top with coleslaw mix and drizzle over some Clover Classic Dairy Snack chipotle and lime dressing and serve. Garnish with fresh coriander, pickled jalapenos & lime wedges.
