Clover Self-saucing Toffee Apple Pudding

For the apples
4 large granny smith apples, cored & thinly sliced
Juice of 2 lemons
1 tsp cinnamon
For the batter
2 cups self-raising flour
2/3 cup brown sugar
2 Tbsp custard powder
1 tsp cinnamon
1 tsp salt
2 cups milk
½ cup Clover Fruits of The Forest strawberry & cranberry with cereals and seeds
¼ cup oil
¼ cup golden syrup
For the toffee sauce
1 cup boiling water
½ cup caster sugar

Preheat oven to 180ºC.
In a bowl combine apples, lemon juice and cinnamon. Allow this to stand for about 5 minutes while preparing your batter. Whisk together Clover fruits of the forest, milk, oil, and golden syrup, then sift in all the dry ingredients. Fold the dry ingredients into the wet ingredients until well combined.
Arrange the apples on top of the batter and pour over liquid you used to soak the apples in and bake for 40 – 45 minutes. To make the sauce, add water and caster sugar into a saucepan over medium heat and allow this to simmer until the sugar has dissolved. Increase the heat and bring to a boil. Boil for about 5 minutes until the syrup turns into a dark or golden color.
Once the pudding is ready pour the toffee sauce over the pudding. Allow this to stand for a few minutes before serving. Serve with Clover Fruits of The Forest Strawberry & Cranberry with Cereals and Seeds.
