Clover Retro Prawn Cocktail

INGREDIENTS
 
250 g prawns, frozen or fresh 
2 Tbsp Clover Mayonnaise #1
2 Tbsp plain yoghurt
1 Tbsp sriracha sauce
½ cucumber, deseeded and diced
salt and pepper to taste
6 coupe champagne glasses (shallow broad rimmed)


Crushed Avocado
2 avocados, halved
juice of ½ a lime2 Tbsp Clover Mayonnaise #1
handful coriander leaves, chopped (reserved some for garnish)
salt and pepper to taste
black sesame seeds, to garnish
Clover Mayonnaise #1, to drizzle 
 
To Serve
6 prawns in shell, cooked
lemon slices
 
METHOD
 
Cook the prawns in frying pan in salted water until turning pink and just cooked. Peeled and devein.
Mix together the mayonnaise, yoghurt, sriracha sauce, cucumber, and prawns. Season to taste. Spoon the prawn mixture into the champagne glasses.

For the Crushed avocado, using the back of a fork, smash 3 of the avocado halves with the lime juice, mayonnaise and coriander and season to taste. Cut the 4th half avocado in thin slices and dip one half of every slice in the black sesame seeds.
Spoon the crushed avo onto the prawn mixture in the glasses and top with cooked prawns in shell. Put 1 to 2 avocado slices on top, drizzle with some mayo and garnish with chopped coriander and lemon slices. Garnish with more cooked prawns if wanted.
