Prof Elain Vlok’s Cheeseboard platter

For the mini savoury tarts
1 big onion, finely chopped
25 ml cooking oil
1 clove of garlic
1 green or red sweet pepper, cleaned and chopped
250 g mushrooms, finely chopped
125 g ham, cut in small blocks
120g Clover Cheddar cheese, grated
3 jumbo eggs
25 ml cake flour
5 ml dry mustard
500 ml Clover full cream milk
5 ml mixed spice
25 ml freshly chopped parsley
Salt and black pepper to taste
2,5 ml paprika
•    Fry onion in oil until soft and gold in colour
•    Add garlic and sweet pepper and fry for 2 minutes
•    Add mushroom and fry until all water has evaporated
•    Add ham and fry another 2 minutes
•    Use a spoon and put mixture into a 2 litre oven dish
•    Add half of cheese on top of mixture
•    Mix the eggs, flour and dry mustard in a bowl until smooth
•    Add milk, spices, parsley, salt and pepper and paprika
•    Mix well and pour on top of the onion and cheese mixture in the oven dish and add more grated cheese on top
•    Bake for 45 minutes in a pre-heated oven at 180 degrees Celsius until golden brown on top
•    Cut and dish up whilst hot
•      Deliver 6 – 8 portions
Overnight Feta
2-3 discs of Clover Feta
½ cup Olive Pride Extra Virgin Olive Oil
¼ c Apple Cider
Few springs Rosemary
Few garlic cloves 
Place all the ingredients into a jar and allow to marinate. Serve with Clover Cheddar for a salty side and crackers.
