Clover Pride Rainbow Cake

8 eggs, large
4 cups granulated sugar
5 cups cake flour
2 cups Clover Fruits of the forest Strawberry
1 ½ cups of cooking oil
4 tsp baking powder
2 tsp vanilla essence
500g unsalted butter, softened
1kg icing sugar, sifted
1 tsp vanilla bean paste
2-3 tablespoons of boiling water
gel food colours
electric purple gel food colouring
electric blue gel food colouring
electric green gel food colouring
electric yellow gel food colouring
electric orange gel food colouring
christmas red gel food colouring
to assemble

dusting of edible glitter

Preheat oven to 180C. Grease and line two 20cm cake tins with baking paper.

Start by making the cake batter. Place sugar and eggs into a large mixing bowl and beat for about 4 minutes until it is light and fluffy. Add the rest of the ingredients and gently fold in until fully incorporated.

Divide the batter between 6 bowls and add each of the different food colours (6-8 drops) into each of the 6 bowls of batter and mix through to achieve the 6 different colours of the pride flag. Pour two of the colours of batter into the two separate prepared baking tins and bake each layer for 30-35 minutes or until an inserted skewer comes out clean.

Allow each layer to cool in the tin for 10 minutes before removing from the tin and cooling on a wire rack. Repeat this for the other 4 batters until all the layers are baked.

To make the buttercream, whip the butter in a large mixing bowl until light and fluffy. Gradually beat in the icing sugar, a few tablespoons at a time, until you have a smooth and creamy buttercream. Beat in the vanilla bean paste and two tablespoons of hot water until incorporated. Divide your buttercream between 6 medium sized mixing bowls and colour each bowl in a different colour similar to the cake batter.

To assemble your cake start by placing the purple layer on a cake plate. Pipe a small amount of icing around the circumference of the layer and spread a tablespoon of Clover Fruits of the Forrest in the centre of the cake.

Top with the Blue Layer of cake and repeat the process followed by the green, yellow, orange and red. Using your remaining buttercream, decorate your cake as desired. Don’t be afraid to get creative.

Finish off by adding some sprinkles and edible glitter to your cake. Enjoy!
